From water to brewing liquor

For a brewery – no matter how big or how small – water is a very big deal. After all, beer can be up to 95% water. The H2O used in the beer-making recipe is often referred to as “brewing liquor” and its make-up has a big impact on the quality and properties of the beer produced.
